MAKROUTS WITH ALMONDS, SEEDS OF SESAMES AND SPICES

I propose a new version of the famous Makroutes. Yes ! I do not get tired of it, it's one of my favorite pastries. This version differs by adding spices such as cinnamon, ginger or cardamom as well as grilled sesame seeds ground both in dough and stuffing. I opted for an ovoid shape to change the usual rhombus. I also added an egg to the composition of the dough to prevent it from crumbling when cooking.

INGREDIENTS:

For the dough:
800 gr of semolina
50 gr of flour
40 gr of grilled sesame seeds and finely ground
1/2 teaspoon of cardamom
1/2 teaspoon of cinnamon
350 gr of melted butter
1 egg
1 teaspoon of salt
1 teaspoon of bicarbonate
100 ml of water
130 ml water of orange blossom




For stuffing:
270 gr of almond powder
40 gr of grilled sesame seeds and finely ground
100 gr of sugar
30 gr of butter
150 ml of orange flower water
1/2 teaspoon of cinnamon
1/2 teaspoon of four spices
1/2 teaspoon of ginger
1/2 teaspoon of cardamom



Other Ingredients:
Frying oil
Honey
2 tablespoons water of orange blossom
Sesame seeds

PREPARATION:

In a large bowl, place the semolina, flour, sesame powder, salt, and bicarbonate. Dig a well and pour the cooled melted butter and egg.



Mix with the palms of the hands before adding a mixture of water and orange flower water gradually.




The dough should be soup and homogeneous. Shoot and place in the fresh 30 minutes before dividing into balls of 40 gr.



Mix all the ingredients of the stuffing by adding orange flower water gradually. The stuffing must not be sticky but enough soup and you can form balls of 20 gr



Spread the dough slightly by hand in a small circle, place the filling ball in the center before locking it. Shape the stuffed dough into an egg shape. Let the cakes crumble for 1 hour at room temperature.



Fry the cakes in a hot oil bath but do not smoke over medium heat to allow cooking. Once the makroutes are cooked with a beautiful amber color, drain on absorbent paper and let cool. Emmieller by lightening the slightly heated honey with orange flower water. Drain delicately, sprinkle with sesame seeds and enjoy.
