Christmas without poppy cake? Almost unimaginable. Poppy has been known for centuries and is usually served together with honey. The traditional Christmas poppy seed is prepared with a yeast dough. My favorite cake is a poppy cake with shortcrust pastry, decoratively decorated with dough grid.

The ingredients for the dough:
- 500g flour
- 250 g of butter
- 150 g of sugar
- 2 eggs
- 2 tablespoons Schmand
- 3 tsp of baking soda
The ingredients for the poppy coating:
- 400 g of poppy
- 2 eggs
- 100 g of sugar
- 2 tbsp honey
- 1 teaspoon Baking powder
- 1 tablespoon orange
- 1 tsp grated lemon peel
- 1 tbsp raisins
- 2 tbsp rusk, ground
1. The preparation I start with the poppy because it is a little time-consuming. First, the poppy with hot water or hot milk. Leave overnight, then drain and crumble twice in the mincer. Separate the eggs. Mix the egg yolk with sugar and honey. Baking powder, raisins, orange peel and grated lemon peel. Rusk, the mass makes fluffing. Whip the egg whites and place them under the egg yolk sugar-honey mixture.
2. The dough: all the ingredients quickly (short dough may not be a long kneading) to one a short dough. Form into a ball, fold into foil and place in the refrigerator for an hour.
3. Lay a baking sheet 25x35 with baking paper. Roll out two-thirds of the shortbread dough. Lay the ground and fill the poppy seed. Roll out the rest of the dough, cut the dough wheel into strips and cover the cake in a grid-like manner.
